A great concept for the mixture of people who attend our dinners and holiday get-togethers--start with a vegan dish, alter it later if a vegetarian option is also needed, and if omnivores attend, a meat dish or 2 will complement the meal or can be added to the casserole or soup. Awesome!

I made a delicious pesto recipe, black bean and goat cheese quesadillas, and a cannellini dip. Can't wait to make more.
