One-bowl cakes are the forgotten gems in the world of home baking.

This book caught my eye because the less cleanup to do after preparing a cake the happier I am. This book is full of pretty good-looking cakes, and the one I tried - Salted Peanut caramel chocolate cake - turned out perfectly. Saulsbury goes into great detail about what soft butter is, as opposed to melted, the fluff and scoop method of measuring dry ingredients, and the variations on mixing (beaten, stirred, blended, creamed, etc.) She also gives us a couple of recipes for our own cake mix to have on hand. My only quibble is about the inclusion of sour cream, cream, plain yogurt in less than full container amounts in some of the recipes. She claims all the ingredients in her recipes are common in our pantry, but my pantry includes only 1% milk and flavoured yogurt. I guess there might be a little less whim and a bit more planning for some of these cakes, or maybe she means I should make two instead of only one.
